1/2 cup chopped green onion
2 Tbsp. fine dry bread crums
3 canned chipotle chile peppers in adobo sauce, chopped
2 fresh red serranno chile peppers, seeded and finely chopped
1/2 tsp. salt
1 lb. lean ground beef
8 1-inch slices bread, toasted
Sliced pickled green tomato (optional)
Sliced red onion (optional)
Optional ingredients include, cheddar cheese slices, bacon strips
and chipotle mayo.
1. in a large bowl combine green onion, bread crumbs, chipotle pepper, serrano pepper, and salt. Add ground meat; mix well. Shape meat mixture into four 3/4-inch-thick patties.
2. Place patties on the rack of an uncovered grill directly over medium coals. Grill for 14 to 18 minutes or until done (160 degrees F), turning once halfway through grilling.
3. To serve, place a burger on four of the bread slices. If desired, top with green tomato, red onion and additional serrano peppers or other optional ingredients. Top with the remaining bread.
