Potato Casserole with Corn Flakes

32 oz. frozen potatoes (cubed) or 32 oz. bag of Southern Hash Browns
2 cups sour cream
1 can 10.5 oz. of Cream of Chicken Condensed Soup (98% fat free)
1/2 cup (1 stick) melted butter
1 tsp. salt
1 tbsp. minced onion
2 cups grated cheddar cheese or 1 bag 8 oz. mild cheddar cheese

2 cups corn flakes
1/4 cup melted butter - same as 1/2 stick of butter

Thaw potatoes and mix the first six ingredients. Pour mixture into lightly greased 13" x 9" pan (preferably made of glass) and level out. Crush corn flakes and mix with 1/4 cup melted butter in Ziploc bag. Spread on top of potato mixture. Bake at 350 degrees covered with aluminum foil for 35 minutes. Then uncover and bake for another 15 minutes.
